Strawberry Cheesecake Recipe

Ingredients
For the base:
  • 200 g ground biscuits
  • 100 g butter
For the cheesecake:
  • 600 g Philadelphia
  • 200g Mascarpone
  • 200 g sugar
  • 3 eggs
  • 2 vanilla pods
For the strawberry coulis:
  • 216 g strawberries
  • 72 g sugar
  • 27 ml lemon juice
For garnish:
  • 500 g strawberries
Instructions
For the base:
  1. Grind cookies into crumbs.
  2. Melt the butter and pour it into the crumb.
  3. Mix thoroughly.
  4. Transfer the batter into the pan, and carefully press crumbs into bottom and edges.
  5. Put it in the freezer.
For the cheesecake:
  1. Mix Mascarpone and Philadelphia cheeses in a food processor on the lowest speed.
  2. Gradually add sugar, keep whisking.
  3. Cut the vanilla pods and transfer seeds into the cream cheese batter.
  4. Then stir in the eggs one at a time.
  5. Pour the cream cheese mixture into the baking dish.
  6. Bake in a preheated to 150oC oven for about 40-60-minutes.
  7. Let cheesecake cool in the pan.
For coulis:
  1. Puree strawberries in the blender, add sugar and lemon juice.
  2. Pour the mixture into a saucepan and set it on fire.
  3. Bring to a boil, and simmer for a minute.
  4. Remove from heat, strain seeds from strawberries.
Serve:
  1. Spoon cooled cheesecake with strawberry coulis and garnish with fresh strawberries.
