Cut the avocados in half and take away the bone. Take away all the pulp with the help of spoon. Shift it
in a separate bowl, and thoroughly mash the avocado pulp with a fork or blender until it will be creamy. Adds sliced onion, green celery, lime juice and salt.
Mix thoroughly.
Ceviche
You need to cut finely shrimps. Clean pepper of seeds and cut in small cubes. In a bowl, mix shrimps, pepper, olive oil, pepper, salt. Let infuse for 10 minutes.
Service
On warm scones put the guacamole, ceviche on top and decorate with cilantro.
