To be honest, I don’t actually like to host, because I’m the “Man of Chaos”, and my home is always a creative mess. And when you invite someone to your place, you should at list clean it, right?
- 400 g sugar
- 4 eggs + 1 for greasing
- 1 packet (7 grams) baking powder
- 650 g flour
- 500 g unpeeled almonds
- 1 pinch salt
- 1 packet vanilla sugar
- Lemon zest
- 100 g butter (room temperature)
- 50 g honey
- Sift the flour in a bowl, mix well with baking powder, make a well in the center, and break in 4 eggs (one by one). Knead the dough with a wooden spoon or hands.
- Add the butter, sugar, lemon zest, and mix well.
- Then add vanilla sugar, a pinch of salt, honey, and mix well again.
- Finally add almonds, stir again, and transfer the batter on the working surface.
- Knead the dough until elastic, then fold it into a ball (the dough will be very dense).
- Divide the dough ball into 6 pieces. Form each piece into a roll.
- Carefully place the biscotti rolls onto baking sheets with parchment paper.
- Whisk the egg with a fork and generously grease the dough rolls with it.
- Put the sheets into preheated to 180 ° C oven for 20-25 minutes.
- Remove from the oven, allow a little cool, cut loaves bread knife to not thin slices and lay the slices up the trays. Remove from the oven and, when it is cool enough to handle, cut into slices. Place the slices cut side up back onto the baking sheets.
- Bake it for another 10 minutes. Transfer to a wire rack to cool.
You can add any dried fruits.
All the ingredients should be at room temperature.
You can reduce the quantity of the sugar if desired.
Luckily, my friends are very simple and funny guys, so they never ask for my opinion. They just come and laugh at the mountains of photographic equipment in the middle of the room, camera in a refrigerator (yes, this also happened once), and scattered ingredients, which I forgot to clean after the previous shoot.
And even if your friends attacked your home, you still have to be a nice host. And at list treat them. And I’m a man of Chaos. And you will rather find a cookbook in my breadbasket then some delicious ciabatta.
So when I first tried biscotti (or cantuccini) which chef Alex Shvets cooked for the shooting, I thought: it’s perfect for men of Chaos like me. I just cooked them, then tossed cookies into FoodSaver canister and vac-packed them, so I always have a tasty snack. Add some dried fruits and a good wine, and I am ready to host. Well… maybe pull the camera out of the fridge to…
And how do you treat your guests? Do you have some “house favourite”?
