What are the general features that attract us in Asian cuisine? Its spicy, colourful and delicious food, which can hardly be compared with any other. It is totally different. Starting from a set of products and finishing with presentation of the dish.
In Asia, people go crazy about noodles and there is incredible number of noodle dishes. People started cooking noodles approximately 6,000 years BC. Back in those far days, noodle dishes were considered as high-class food and only high-ranking persons could afford it.
Wheat noodles were incredibly expensive and only since 1945 it became part of ordinary people’s daily diet! This dish is a mandatory attribute of all the holidays, birthdays and weddings. It’s definitely worth mentioning that noodle length is a symbol of longevity and happy family life.
Today we’ll cook “Kuksi” soup, and noodles are one of its main ingredients!
Kuksi or kuksu is the Korean national dish, which consists of broth, noodles, mixed vegetables and meat.
Kuksi is a famous Korean soup. It originates from the Korean word “kusichumi” that means a mixture of vegetables that make up the soup.
This soup is great because it has a so many different variations. You will be able to adjust spiciness and sourness of soup according to your taste.

Traditional Korean table setting includes lots of plates or bowls. And the number of dishes clearly indicated what kind of holiday is celebrated in the family – birth of a child or an anniversary. And the maximum number of meals – 12, shows the imperial feast.
Besides wooden sticks, There is always a spoon on the table, to eat a soup. Spoon in the Korean culture is a symbol of life.
- 150 g chicken broth
- 40 g tomatoes
- 20 g soy sauce
- 20 g mirin
- 15 g zucchini
- 15 g bell pepper
- 25 g beef
- 10 g radish
- 3 g cilantro
- 1 egg
- 15 g cucumbers
- 80 g egg noodles
- Put a saucepan on the stove, pour the chicken broth, soy sauce, mirin.
- Bring to a boil. Blanch tomatoes, slice them in a free shape and put in the hot broth, mix with blender.
- Fry zucchini and bell pepper in olive oil until golden brown and add 5 g of soy sauce.
- Fry beef in vegetable oil.
- Cut radish into thin strips.
- Slightly whisk the egg and fry in a frying pan in the shape of pancake, roll it and finely chop.
- Slice cucumbers into thin half-rings and season with fresh lemon juice and sesame oil.
- Cook the egg noodles in boiling water, rinse under cold running water.
- Put the noodles in the centre of a plate, add small portions of sliced zucchini, peppers, cilantro, beef, radishes, thinly sliced egg pancake, and cucumbers. Pour the broth and decorate with sesame seeds.
In summertime “Kuksi” is eaten cold sometimes with ice. In winter, broth is warmed up.
