Project Description
Fedor Tardatyan
Chef at Oldich Dress & Drink
Moscow, Russia
I was born on November 4, 1974.
I work twenty years in the restaurant industry and three years as a chef. In my restaurants I often cook for myself. I love it and I love doing it.
I travel a lot, I was almost in the whole world, from where I take recipes and culinary mood. When I am not very busy with my work I go for travel immediately.
I like very much to visit various flea markets, shops, open-air bazaars and shops with old junk. Favorite things I buy and bring to Moscow.
I also do gastronomic parties for my friends and one day I realized that I could become a chef. Herculis Studio, where we were shooting, was created specifically for this purpose. Here, I experiment with ingredients, creating new dishes.
My culinary preferences are extensive from Pan-Asia to the new American cuisine.
I love parties and rock concerts, American cars and tattoos. And of course traveling.
The dish in the photo: Burger with rosemary aioli and caramelized onions. Garnish salad with persimmon, chard, walnuts, pomegranate sauce and mustard.
It is new dish of American cuisine. Gourmet Burger is the opposite of the usual unhealthy burger from Mc Donnalds. I highly recommend it!
For this dish I use minced Hereford Beef , caramelized onions with white wine and balsamic vinegar, aioli sauce, made with farm eggs, rosemary and gruyere cheese . And for a side dish I don’t use the usual fries and replace it with a green salad and chard sauce of pomegranate. That’s all, experiment!
